Gluten Free Chocolate Mud Cake with Medicinal Rose Buds

This is a SERIOUSLY good Gluten Free Chocolate Mud Cake.  The medicinal rose buds add a gorgeous presentation but also provide the benefits of nourishing the liver, refreshing the stomach and promoting the circulation of Chi (Qi). I like to steep the rose hips first and make an extra cup to sip along the clouds of cocoa and flour.

Preheat the oven to 350º F/ 175 º C.

Prepare two 9-inch/ 22 cm cake pans by spraying with baking spray or butter and lightly dust with flour.

Steep rose hips in 1 cup boiling water. Set aside.

In a Mixing Bowl (or Stand Mixer Bowl) add flour, sugar, cocoa, baking powder, baking soda, salt. Use your Whisk or Paddle Attachment to mix the flour mixture until combined.

Add coconut cream, coconut oil, eggs, and vanilla to flour mixture.  Mix together on medium speed until incorporated. Reduce speed and carefully add rose hip tea to the cake batter. Beat on high speed for about 1 minute to add air to the batter. The batter is meant to be quite thin. 

Distribute the cake batter evenly between the two prepared cake pans. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven.  Cool for 10-15 minutes then remove from the pan and cool completely.

Top with Dried Rose Hips and Serve.



Notes: You can omit the Rose Hip tea and replace it with 1 cup of orange juice (GF Chocolate Orange Cake) or keep it plain with 1 cup of boiling water (GF Chocolate Mud Cake).
