We are well and truly on the kombucha train. In fact we have been making it and drinking it for a few years now, mostly for the beneficial probiotics that assist with digestive health but honestly it is really more-ish and we have acquired a real craving for it.
So what is kombucha?
Kombucha is a slightly fizzy fermented tea-based beverage. It is made by using a "mother" or SCOBY ( symbiotic culture of bacteria and yeast) which is the starter mushroom that is fed by green or black tea with sugar to become a “live” gut-healing beverage. It has been around for more than 2000 years which the Chinese believed to be an "Immortal Health Elixir".
Anecdotal studies have shown that drinking kombucha as part of a daily regimen can assist in the treatment of a number of ailments by improving the gastrointestinal flora which promotes a healthy immune system. More info on kombucha here. When the immune system is functioning at an optimal level the body resumes a healthy, balanced state of being. The body finds it's "CHI".
